TAIPEI (Taiwan News) — An expert representative from Nebraska’s beef industry visited the Lee-Ming Institute of Technology on Wednesday (Sept. 25) to provide students and industry professionals with a lecture and demonstration.
Chris Calkins, a professor emeritus from the University of Nebraska, is an expert in maximizing beef quality and has extensively researched the best strategies for beef's commercial preparation. He came to Taiwan as part of a trade mission from Nebraska to boost beef exports to Taiwan.
At the Lee-Ming Institute of Technology, Calkins shared insight on Nebraska’s state-of-the-art cattle-raising techniques, and treated the audience to a taste of Nebraska beef. His lecture also involved a demonstration on the most efficient way for chefs or restaurants to cut steaks from shoulder clod.
Calkins also shared some of his recent research on the best methods for dry-aging beef to maintain flavor and tenderness.
The event was organized in part by the Tyson Corporation, which harvests beef for export to Taiwan from two facilities in Nebraska. Tyson also provided the beef for Calkins’ demonstration.
Nebraska is a major exporter of beef, both domestically and internationally. Around one-fourth of all cattle raised in the US originate from Nebraska, said Calkins.
On his visit to Taiwan with the Nebraska trade mission, Calkins said he was happy to be in Taiwan and have the opportunity to promote Nebraska beef on the Taiwan market. As a retired professor, he also expressed gratitude to the faculty and students at Lee-Ming Institute of Technology for giving him the opportunity to return to the classroom for the day.
