TAIPEI (Taiwan News) — Le Beaujour (芃卓), a French fine dining restaurant in Taipei, is introducing a new seasonal menu, “Autumn Rhythm,” that celebrates the flavors of the season.
Chef Chiang Pi-li (江丕禮) has crafted a menu that highlights the best of autumnal ingredients, from ocean-fresh seafood to meats. Each dish is a testament to Jiang’s culinary skill, combining traditional French techniques with Taiwanese ingredients.
The menu starts with a trio of delectable appetizers. The first, a duck terrine, features confit duck and Pingtung yam terrine sandwiched between crispy yam chips.
The second, a rice-smoked autumn mackerel, is inspired by a traditional Japanese smoking technique. The fish is smoked with rice straw and paired with salted lemon and bonito jelly, creating a harmonious blend of smoky and fresh flavors.
The final appetizer, a caramelized onion, is filled with Comte cheese and chestnuts, offering a sweet and savory bite.
Jiang said the three appetizers are the most challenging part of the menu. Each bite-sized dish is a symphony of flavors, awakening the diner’s taste buds with a harmonious explosion of taste.
For the main course, the Guishan Island red prawn features a succulent shrimp paired with fermented sweet pear and clove oil. The ocean fish and French Saint-Michel mussel offer a delightful combination of pan-seared horse mackerel and French mussels, complemented by seaweed and cold-brewed tea.
The braised pork tail is a hearty and comforting dish, featuring a slow-cooked Taiwanese black hair pork tail with French yellow wine, mushrooms, and vegetables. The rich, tender meat takes three days to complete.
For those seeking a more indulgent experience, the Australian marrunga marble lamb is a luxurious choice. The premium lamb is paired with lamb sausage, grilled Chinese kale, and parsnip, offering a complex and satisfying flavor profile.
To complete the meal, the restaurant offers the refreshing Japanese tangerine Ehime mikan with Ricotta cheese.
In addition to the set menu, it offers an all-day a la carte menu and an afternoon tea set. The restaurant is open for lunch and dinner, with lunch sets priced at NT$1,880 (US$58) per person and dinner sets at NT$2,980.
