TAIPEI (Taiwan News) — The ABV Southeast Asian Bistro launched a limited-time menu spotlighting Padang cuisine from Indonesia’s West Sumatra Province.
The menu features nine typical dishes from the province. Padang cuisine is a traditional culinary style from the Minangkabau ethnic group. It is known for its intense aromas, complex layers of spices, and rich textures balanced with coconut milk. The ABV culinary team traveled to Indonesia earlier this year for on-site research to recreate the flavors in Taipei.
Padang beef rendang (Rendang padang basah) is considered by many as Indonesia’s national dish. Beef is slow-cooked with coconut milk, lemongrass, turmeric, chili, and a blend of spices until the meat is tender.
Double-sauce beef (Dendeng basah padang) is pan-seared beef cooked to a slight crisp and served with red and green chili sauces. The dish is savory and mildly spicy, and an iconic main course often found on local families’ dinner tables.
Padang beef soup (Soto padang) is a flavorful Indonesian-style beef soup infused with aromatic spices and served with crispy potato cakes.
Grilled shrimp skewers (Sate udang pantai) are made with fresh white shrimp marinated in fragrant spices, then charcoal-grilled and served with calamansi sauce and chili sauce.
