TAIPEI (Taiwan News) — Ching Jiao Silk and Broth Noodle Bar (青嬌膠原麵館) offers a refined take on Taiwanese comfort food, centering its menu on rich, heartwarming chicken broth and a deep commitment to the flavors of home.
Located in Taipei, Ching Jiao is the latest venture from the team behind Chung Ching Store (忠青商行), a restaurant known for its military dependents’ village-style cuisine. Beloved by locals and international visitors from Japan, Hong Kong, and Korea, Chung Ching Store’s popularity inspired a new concept aimed at elevating Taiwanese street food for broader appeal.
Ching Jiao’s culinary mission revolves around the familiar presence of chicken soup on Taiwanese dinner tables, using it as a gateway to explore the country’s culinary heritage. At the heart of the menu is golden chicken stewed soup, a luxurious broth steeped in Jiangzhe cooking traditions. Corn-fed chicken is simmered for eight hours with Jinhua ham and dried bamboo shoots, creating a rich, restorative flavor.
The menu also features a taro pork rib soup, made by slow-simmering pork bones for six hours. Each dish is designed to evoke a sense of comfort and belonging—recreating the feeling of a home-cooked meal shared with loved ones.
In Taiwanese culture, chicken soup often symbolizes care and family connection. Ching Jiao hopes to make this comfort food part of everyday life rather than a dish reserved for special occasions.
The name “Ching Jiao” is meant to embody the image of a gentle but resilient wife and mother, lovingly preparing food for her family. That same spirit is infused into every aspect of the restaurant’s service and menu.
In addition to its signature soups, Ching Jiao offers a modern spin on classic Taiwanese small dishes. Highlights include oil-poached chicken, spicy and sour chicken, crispy pork ribs, and fried rice cake. With more than 20 small dishes in rotation, 10 are featured each day for just NT$50 (US$1.70) apiece, offering a well-rounded and affordable dining experience.
