TAIPEI (Taiwan News) — Dayne’s Texas Barbecue’s first international branch has opened in Taipei.
Beginning as a backyard operation in 2018, it has evolved into a celebrated food truck and restaurant known for its traditional 18-hour wood-smoked barbecue. This time-honored method uses natural wood smoke to infuse rich flavors — a defining characteristic of Texas barbecue culture.
To ensure authenticity, the Taiwanese team completed a month-long training in Texas. Founder Dayne Weaver traveled to Taipei to oversee the opening and share his passion for spreading Texas barbecue traditions globally.
Weaver noted that in Texas, barbecue is more than just food. It is a centerpiece for celebrations ranging from birthdays to gender reveal parties.
The brand ranks seventh on the Texas Monthly Top 50 BBQ list, a ranking compiled every four years based on visits to hundreds of barbecue establishments across Texas.
The Taipei menu remains faithful to the original, preserving 85-90% of the US offerings. Signature dishes include the classic smoked beef brisket, Texas-style pork ribs, and smoked sausages.

Highlighting the fusion of cultures, Dayne’s introduced a unique smoked pork belly fried spring roll, inspired by Weaver’s appreciation for Asian flavors. Having lived in Japan for three years and adopted two Filipino children with his wife, Weaver’s creation reflects a personal connection to Asia and a desire to blend culinary traditions.
To further appeal to local tastes, the Taipei team developed creative adaptations such as smoked beef brisket fried rice and smoked pork sauce hamburger steak with pasta. These dishes provide Taiwanese customers familiar textures and flavors while maintaining the essence of authentic American barbecue.
Dessert offerings also nod to Texas roots, featuring handmade kolache pastries and traditional Texas banana pudding, rounding out a menu that bridges continents through the universal language of food.
