TAIPEI (Taiwan News) — ABV Mediterranean Bar & Kitchen in Taipei has introduced a limited-time menu featuring classic Andalusian dishes.
From Aug. 1 to Oct. 31, the restaurant is serving eight dishes from Andalusia, Spain’s southernmost autonomous community. Andalusian cuisine blends Mediterranean, Moorish, and Spanish influences, using ingredients such as olive oil, citrus fruit, and paprika. Flavors range from earthy and nutty to smoky and tangy, with seafood playing a prominent role due to the region’s proximity to the ocean.
Gazpacho Andaluz is a cold soup made from tomatoes, green peppers, cucumbers, and other vegetables, often enjoyed in summer. Arroz con carne Andaluz features beef slow-cooked in a rich broth with rice, onions, garlic, bell peppers, and spices. Ropa vieja Andaluz adapts the traditional puchero stew, using chicken and chickpeas.
Carrillada de ternera consists of beef cheeks braised slowly with red wine and vegetables. Tocino de cielo, a custard dessert from Jerez, originated from the sherry-making process, which left a surplus of egg yolks later combined with sugar and caramel by nuns to create the dish.
